The four pillars of responsible beef production

Alberta’s cattle feeders take great pride in the crucial role they play in producing our province’s world class beef – and in using responsible and sustainable production methods.

Here at the Alberta Cattle Feeders’ Association (ACFA), we support our members in continuous improvement under four pillars:

1. Animal care

Alberta’s cattle feeders believe in treating the animals that feed us with care and respect. They follow the National Beef Code of Practice to ensure the finest in animal care, food safety and sustainability.

Two key programs that help them maintain the highest standards of animal care are:

-The Feedlot Animal Care Assessment Program

-The Canadian Livestock Transportation Certification

2. Animal health and production

Ensuring the health and well-being of livestock is a top priority for feedlot operators. ACFA is heavily invested in helping through initiatives such as the new histophilosis vaccine, and through forage and feed grain research.

3. Environment

Cattle feeders work hard to minimize environmental impact from their operations. 

ACFA has participated in several initiatives:

-The Feedlot Emergency Preparedness Plan which protects animals, the environment and human health in the event of an incident such as a disease outbreak or a natural disaster. 

-Environmental impact studies, such as Alberta Agriculture and Resource Development’s Livestock Impact on Groundwater Quality in Alberta.

-Interaction with the Natural Resources Conservation Board on environmental initiatives.

-Membership of the Intensive Livestock Working Group and Agri-Environmental Partnership of Alberta

Project Clean Cow.

4. People and communities

Protecting people, and the communities in which they operate is important for cattle feeders. Food safety, farm safety and community service are at the centre of their everyday operations.

It is on these four pillars that Alberta’s cattle feeders operate in the most responsible manner possible. They strive to ensure excellence in animal care, food safety, farm safety, and respect for people and their communities. At ACFA we are working hard to support them in those efforts.

The truth about beef production and sustainability

Canada’s beef producers want consumers to know that they are producing good, healthy food in a sustainable way. 

But, what does sustainable mean, and what are beef producers doing to foster responsible production? For answers to these questions we turned to the Canadian Roundtable for Sustainable Beef (CRSB).

CRSB is a collaborative, multi-stakeholder organization dedicated to promoting sustainability throughout the Canadian beef industry. They have three main pillars of focus: 

1) Sustainability benchmarking – a farm-to-fork assessment of the overall performance of the Canadian beef industry from environmental, social and economic perspectives.

2) The Certified Sustainable Beef Framework, which provides a tool for producers to attain certification against sustainability standards, which can then be communicated to consumers.

3) Sustainability projects, which help advance continuous improvement for sustainability in the Canadian beef industry.

“We define sustainability as a socially responsible, economically viable and environmentally sound product that prioritizes the planet, people, animals and progress,” said Andrea White, CRSB’s community engagement manager.

CRSB has adopted the same five focus areas as the Global Roundtable for Sustainable Beef (GRSB): natural resources; people and the community; animal health and welfare; food; and efficiency and innovation. 

Some recent projects which have come from the organization include the National Beef Sustainability Assessment and Strategy (2016), CRSB Certified Sustainable Beef Framework (2018), collaboration on a Species at Risk on Agricultural Lands project, intended to maintain and enhance wildlife habitat, and a study evaluating consumer perceptions of beef sustainability.

How is the beef industry doing on sustainability?

“One of our priorities is to teach the public that beef production in Canada is already sustainable,” Andrea said. “There are a lot of loud voices out there telling very small pieces of the story, but they often don’t talk about the many ways beef production actually benefits the environment. By working together as an industry, we can tell the whole story, and demonstrate the good work we are doing.”

Through a combination of sustainability projects and public outreach, the CRSB aims to support continuous improvement in the industry’s sustainability performance, while simultaneously creating public awareness of the true facts about the impact of beef production on communities, animal care and the environment. “Sustainability is a journey, not an end point,” said Andrea.

Cattle feeders and sustainability

Sustainability is a top priority for Alberta’s cattle feeders, so the appointment of Les Wall of KCL Cattle Co., in Coaldale Alberta, to the CRSB Council is good news. 

“We are pleased to have Les Wall, a progressive and innovative producer, join the CRSB Council,” said Anne Wasko, CRSB chair. “We look forward to his valuable expertise and experience in representing the cattle feeding sector on our multi-stakeholder leadership team, to help propel the sustainability of Canadian beef forward.”

How roller-compacted concrete is improving cattle health in feedlot pens

Alberta’s cattle feeders are always looking for innovations that will contribute to their excellent standards of animal care and improve the sustainability of their operations.

Roller-compacted concrete (RCC) is a product new to the industry that can be used as a base for feedlot pens instead of clay. Jared Clark, of KCL Cattle Company Ltd., near Lethbridge, explains some of the benefits of RCC, in this video:

Benefits of RCC

Roller-compacted concrete was developed in the 1960s, but its application in the feedlot world is new. The benefits for cattle health, feedlot efficiencies and environmental performance are all being studied, but feedlots using the product have already observed:

– Reduced pen dust, which improves air quality, as well as water quality in the dugouts near the pens.

– Reduced loss of clay every time a pen is cleaned. This means less pen maintenance, and also reduces the emissions created by trucks hauling away manure mixed with clay.

– Less mud in pens gives cattle more room to roam, and also promotes foot health.

How 5 freedoms help ensure excellence in animal care

A lot of progress has been made since Alberta’s livestock producers banded together 25 years ago to promote excellence in animal care.

Commodity organizations, including the Alberta Cattle Feeders’ Association, founded Alberta Farm Animal Care (AFAC) in 1993 to ensure that all producers have access to the resources and information they need to provide a comfortable, low-stress environment for their animals.

“We are a non-profit, multi-species animal welfare organization,” said Kristen Hall, marketing and membership manager at AFAC. “We were formed by the livestock industry, for the livestock industry, to be a collective voice for animal welfare within the province.”

The notion of animal care is based on the five freedoms:

  1. Freedom from hunger and thirst
  2. Freedom from discomfort
  3. Freedom from pain, injury and disease
  4. Freedom from fear and distress
  5. Freedom to express their normal behaviours

 

Some of the free resources AFAC provides for livestock producers include guidelines, videos, codes of practice and factsheets.

On Sept. 7 and 8, AFAC is partnering with the Foothills Forage and Grazing Association to host a Stockmanship Clinic. The two-day course will be taught by Dylan Biggs, cattle handling expert and specialist in low-stress animal care.

“We find people are very keen to learn,” said Kristen. “Even though they might have been caring for animals their whole lives and they’re already doing a good job, for the most part they’re still willing to take the opportunity to learn more.”

As well as providing resources for livestock producers, AFAC also advocates for the industry. “We do a lot of public education, at events such as the Calgary Stampede and Aggie Days,” said Kristen. “We also do classroom sessions in schools, teaching students how food animals are raised.”

Each year, AFAC hosts a Livestock Care Conference. The next one is scheduled for March 20 and 21, 2019, in Olds, AB.

Why our high standards of animal care make Canadian beef the best

Canada’s beef producers are committed to raising their cattle in a comfortable, low-stress environment. Healthy animals under good care produce a better product. Our producers realize that caring for, and respecting, the animals that feed us is the right thing to do.

“We’re proud of our production practices and how we look after the cattle in our care,” said Bryan Walton, ACFA’s president and CEO. “The way we raise our animals is integral to providing premium Alberta beef to the world.”

Here at ACFA, we have championed several initiatives that help our members meet or exceed best practices and regulations:

National Beef Code of Practice

In association with industry partners and the National Farm Animal Care Council (NFACC), we helped develop the National Beef Code of Practice. The code, which was developed in conjunction with animal welfare and enforcement representatives, as well as experts in beef cattle behaviour, health and welfare, defines the base standards of animal care.

Canadian Feedlot Animal Care Assessment Program

This fully auditable program, which is certified by the Professional Animal Auditor Certification Organization (PAACO), provides cattle feeders with a way to assess their animal care practices and demonstrate their high standards. Consumers increasingly rank animal welfare as an important factor in their buying decisions and this program provides confidence in an integral segment of beef production.

Industry collaboration

We collaborate with important animal care organizations like Alberta Farm Animal Care, and participate in programming such as the Canadian Livestock Transport Certification Program. This is a standardized course offering certification that is recognized throughout Canada and the United States. The program is led by an industry initiative to address the need for increased accountability and improved handling practices in livestock transport. One of the main strengths of Canadian Livestock Transport is that the courses present the current regulations for animal transport in Canada.

The basis for these programs is scientific knowledge about the needs of animals. Through training and experience, and with the guidance of accredited veterinarians and animal nutritionists, our industry members produce healthy, delicious food in an ethical, sustainable, and socially responsible manner.

How respect for the animals that feed us aligns with beef cattle production

Last week on this blog, we learned about the food safety innovations at Harmony Beef’s new processing plant. This week we’re exploring the new standards of animal care being practised at the plant.

We visited the plant and spoke with Harmony’s director of marketing, Cam Daniels to learn more. “One of the most important things in our business – and this came right from the owners – is that we must respect the animals that feed us,” said Cam. “They are treated with respect and dignity for the entire time they are with us.”

Warm dry barns keep the animals relaxed and calm

The high standards of animal care at Harmony Beef start with a covered, temperature controlled barn. Some of the barn’s features include:

    • A water vapour management system that keeps the barn comfortably dry at all times, and helps eliminate odours
    • Heated, slip-resistant floors that are well-drained so they remain dry and clean
    • Access to clean, fresh drinking water at all times, in every pen

“Animals that come in together are always kept together, to minimize the stress of new surroundings”, said Cam. “And we don’t keep any animals overnight – we only take in as many as we can process that day. It’s all part of keeping them as relaxed and calm as possible while they’re here.”

How a cow’s natural movement helps minimize stress

At Harmony Beef, the corral that brings the animals up to the harvest box follows a serpentine shape. “It’s influenced by the work of Dr Temple Grandin,” said Cam. “Cattle naturally tend to walk in an ’s’ and by allowing them to follow a natural pattern, it helps keep them moving, while also keeping them calm.

As the cattle move along the corral, they are gently nudged with paddles, rather than electric prods. A doorway allows only one animal at a time into the harvest box, ensuring the other animals stay relaxed until the end.

Better animal care leads to higher quality

Aside from the fact that treating animals well is the right thing to do, there is also a very practical reason why animal welfare matters. Glycogen in the muscles of relaxed animals is converted into lactic acid, which is necessary to produce tasty, tender meat. Stress causes the glycogen to be depleted, and the meat tends to be darker, dryer and less tender. So meat from a relaxed, calm animal is of a higher quality.

How a beef plant is setting a new standard in food safety

A beef processing plant which opened this year just north of Calgary is setting new industry standards for food safety, animal care and environmental stewardship.

This week, we’re exploring the food safety innovations introduced at Harmony Beef, which opened in Balzac, AB., in February 2017.

Hazard analysis and critical control points

The management team at Harmony Beef is committed to meeting or exceeding the stringent requirements of the Canadian Food Inspection Agency’s Food Safety Enhancement Program.

One of the cornerstones of the program is HACCP System (Hazard Analysis and Critical Control Points), a systematic approach to food safety that helps prevent, find and correct hazards throughout the production process.

At Harmony:

    • The plant and production protocols have been designed to meet European standards, which exceed those in North America.
    • Temperature control and air flow systems in the building were designed to control any potential microbial growth and prevent contamination.
    • Critical control points, where inspections and interventions take place, include everything from slaughter to packaging.
    • Supervisory and food safety personnel have the authority to enforce compliance with food safety systems on anyone entering and/or working in the facility.
    • All water used in the plant is treated, and the outflow exceeds Canadian drinking water standards.

Opening up a world of opportunity

Because the new plant demonstrably complies with European food safety standards, it provides the opportunity to increase our trade with EU countries.

International trade is crucial to the growth and sustainability of the beef industry, and to the contribution it makes to the Canadian economy. But, as you can learn in the blog post, Canadian beef in demand: feeding the European market and why it matters, Canada does not meet its tariff-free quota for beef exports to Europe. In the post, feedlot operator Jason Hagel says processing plants in Alberta tend to focus on the U.S. market, leaving the European market under-served.

Food safety, antibiotics and Canadian beef – can the 3 go together?

This is the final part of our three-part series on the use of antibiotics (or more accurately, antimicrobials), in food animals.

To conclude this series, we’re looking at the measures in place to ensure food safety when antibiotics are given to food animals. We continue our conversation with Dr. Sherry Hannon, research team lead and veterinary epidemiologist at Feedlot Health Management Services Ltd.

Animal protein is important in maintaining human health and combatting global food shortages,” said Sherry. “But at the same time, animal welfare needs to be supported and we don’t want animals to suffer because we are afraid to use antimicrobials to treat them, or because regulation will not allow the use of antimicrobials in animals.”

Food safety practices

Farmers play an important role in producing safe, healthy food, while protecting public health. But the care and welfare of their animals is an equally important priority for them. That requires a balance of sound science and responsible practices.

“Stringent food safety practices can help us ensure that the use of antimicrobials is safe for humans while allowing the best in animal care. The food safety practices for controlling bacteria during slaughter and processing are excellent, regulated and effective,” Sherry stated.

She stressed that, for the consumer, proper cooking of all food is the best way to protect against bacteria that has become resistant to antimicrobials.

Regulation of antimicrobials in Canada

Antimicrobials are subjected to a series of rigorous tests, clinical trials and field studies before they can be approved for use in animals or people. And even after a product is approved, testing and monitoring continues.

“Government, public health, veterinary, and livestock agricultural industry sectors have all been working to improve antimicrobial use protocols, monitoring, and transparency,” said Sherry.

“Soon, loopholes will be closed which allow antimicrobials to enter Canada without monitoring (‘own-use importation’ and the import of active pharmaceutical ingredients). The practice of buying antimicrobials at a farm store for use in animals will also no longer be allowed.”

The use of antimicrobials in animals strictly for growth promotion is another practice that’s on its way out. Regulations are soon to be introduced ensuring that the treatment must be required for health reasons.

To treat or not to treat?

In the balance, the benefits to animal welfare and food safety far outweigh the concerns surrounding the use of antimicrobials (including antibiotics) in beef cattle. There are valid concerns though, and they are being taken seriously. Changing regulations and practices will continue to address the issues around their use.

Should Canadians be concerned about antibiotics in food animals?

Last week in part one of this three-part series, we explained why and how antimicrobials (of which antibiotics are one type) are used in beef cattle. This week we’re exploring the causes for concern over that use.

We continue our conversation with Dr. Sherry Hannon, research team lead and veterinary epidemiologist at Feedlot Health Management Services Ltd.

How long do antimicrobials stay in an animal’s system?

There are many different antimicrobials labelled for veterinary use in cattle in Canada. Each is classified according to its uses, its effect on bacteria and the way it works.

“As part of the label, a ‘withdrawal period’ – a period of time before which the animals are not allowed to enter the food chain – is specified. Some antimicrobials have a zero day withdrawal period (they are eliminated from the body within a very short period of time), while others are known to stay in the body for much longer periods,” Sherry explained.

Causes for concern in the use of antimicrobials

Sherry explained that there are two main concerns related to the use of antimicrobials:

1. Antimicrobial residues

A residue is a remnant of the antimicrobial molecule itself or a degradation product of that molecule, left in the animal after harvest.

“For each antimicrobial, a level of residues (usually extremely low) has been deemed to be acceptable for human health through rigorous safety trials,” said Sherry.

“Therefore, meat that goes for sale to people must be at or below that level. The withdrawal period for each antimicrobial defines the amount of time that must have elapsed from the last dose before an animal can be harvested for meat, thus ensuring any possible residues are below the acceptable level and safe for human consumption.

As an added step of food safety oversight, meat at processing plants is regularly tested for residues on an ongoing basis as part of quality assurance and compliance monitoring.”

2. Antimicrobial resistance

According to Sherry, of greater concern than residues is the issue of antimicrobial resistance, which for many reasons, has become a global health issue. As the use of antimicrobials continues, for people and animals, there is increasing development of bacteria that are resistant to them.

“There is a potential for the presence of bacteria on meat or in the environment which carry resistance genes for particular antimicrobials, and this relates to the possibility that these bacteria could multiply or infect people,” she said.

The role of continued research and monitoring

“The above concerns are actively addressed through continued research, regulatory requirements, veterinary oversight, antimicrobial stewardship practices, and producers’ commitment to provide safe and nutritious beef,” noted Sherry. “In addition, appropriate cooking of beef further protects against these concerns by inactivating any residues present, or by killing any viable microorganisms,” she stressed.

The Canadian Integrated Program for Antimicrobial Resistance Surveillance (CIPARS) monitors and describes antimicrobial resistance (and some use) in retail meat, on farm and in animal and human populations.
